Shrimp, My Way.

OK, Seriously the best shrimp recipe I've tried thus far. SOOOOO YUMMY :)

Shrimp, My Way

How to Cook Everything, Mark Bittman


1/2 cup extra virgin olive oil (I used 1/4 cup)

3 or 4 big cloves garlic, cut into slivers (I used 4)

1 1/2 to 2 pounds shrimp, in the 20 to 30 per pound range, peeled, rinsed, and dried

salt and pepper to taste

1 teaspoon ground cumin

1 1/2 teaspoons fresh spicy paprika

minced fresh parsley leaves for garnish (didn't bother with )


OK - Here's how they make it (I just do it in my fry pan!) I heat the oil, add the garlic & fry that until golden and then toss in the shrimp & spices. Just easier in my opinion :) I'm all for easy. But here's the "real" directions for you:


1. Preheat the broiler and adjust the rack so that is as close to the heat source as possible.


2. Very gently, in a large, broad ovenproof skillet or baking pan, warm the olive oil over low heat. There should be enough olive oil to cover the bottom of the pan; don't skimp. Put the garlic in the oil and cook for a few minutes, still over low heat, until it turns golden.


3. Raise the heat to medium-high and add the shrimp, salt, pepper, cumin, and paprika. Stir to blend and immediately place under broiler. Cook, shaking the pan once or twice and stirring if necessary, but generally leaving the shrimp undisturbed, until they are pink all over and the mixture is bubbly. This will take from 5 to 10 minutes***, depending on the heat of the broiler. Garnish and serve immediately.


We've put this over noodles, rice, salad.... even just on its own. Enjoy!

Yeah, I'm still here :)

I think this is the longest I've been "away" from my blog. Of course we were on our big trip, then the day we were leaving we found out..... WE'RE HAVING A BABY!!!! :) So... the last number of weeks (months!) I've been feeling the ughs of the first trimester. I'm happily in my second trimester and although still tired by the evening, no nausea! YES! We found out last week we are having a little boy. My son is BEYOND excited! Many prayers that boy has put in over the years for a baby brother. So we're starting ALL over again (thought we were done, but the Lord obviously had other plans for us!). Now that the shock has worn off, boy that took awhile, we're excited!
On top of all of that we're doing our adventure AGAIN (actually we leave in TWO DAYS) to head back to Arizona & California. We have 9 weeks to hang, play & have fun. We are bursting with excitement!!

So I wanted to pop in & let you know that is why I have terribly neglected my blog. I did do some stamping, so I do have cards to share with you. So I will probably try to post a couple times a week. With our trip we'll start up that blog daily again, so check us out there if you're interested.
